1. Chocolate Christmas Cookies

250g softened butter (preferably salted)
¾ cup or 155g white granulated sugar
1 teaspoon vanilla bean paste
300g plain flour
35g cocoa powder
1 teaspoon baking powder
½ teaspoon of baking soda
Topping of your choice examples: crushed candy canes, peanut butter candies, chocolate candies, sprinkles etc.

Icing

You can choose to buy store made icing or make your own which I will give you the recipe for as well.
230g icing sugar mixture
30g cocoa powder
60 ml boiling water

Step 1: Preheat oven to 180 degrees Celsius

Step 2: Grease two cookie sheets preferably

Step 3: Blend together butter, sugar, and vanilla paste into a medium sized mixing bowl until creamy consistency is reached.

Step 4: Add in all other ingredients and continue mixing for 1 minute.

Step 5: Spoon into tablespoon size balls on the greased cookie sheets spacing 5 centimetres apart. Place in oven for up to 15 minutes until firm.

While your holiday cookies are baking I recommend starting the icing. To make the icing boil your 60 ml of water and when boiling level is reached add the sugar mixture and the cocoa powder. Blend until you reach a paste like consistency that will be slightly runny (will thicken as it cools)

Spread on the cookies and add your chosen toppings. Set aside for 45 minutes to cool and firm.

After the 45 minutes sit down with an icy cold glass of milk or your favourite nog and enjoy these Christmas treats.

2. Christmas Iced Eggnog

473 ml whole milk
236 ml heavy cream
3 ounces bourbon
1 teaspoon freshly grated nutmeg
4 egg whites*
4 egg yolks
113g caster sugar and 1 teaspoon caster sugar

Step 1: Beat egg yolks until light and add 113g caster sugar while mixing, add cream, milk, bourbon, and nutmeg until blended completely.

Step 2: Beat egg whites with mixed until peaks are reached then add teaspoon of sugar. Add this into your mixture. Chill for an hour and then serve over ice.

3. Grilled Zucchini and Caprese Salad

4 Zucchini sliced lengthwise and very thin
1tablespoon extra virgin olive oil
4 tomatoes (vine ripened preferred) seeds removed and chopped
2 120g buffalo mozzarella balls chopped/cubed
½ cup fresh basil

Salsa

1 Cup rocket leaves
1 cup flat parsley leaves
1 tablespoon of tiny capers
1 tablespoon of red wine vinegar
¼ cup extra virgin olive oil.

Step 1: Blend all ingredients in a standalone food processor until smooth. Add water as needed to loosen. Set aside.

Step 2: Preheat your Barbie until medium heat is reached. Brush zucchini with oil and place on grill only turning once at 5 minutes.

Step 3: Remove the zucchini and place on your decorative Christmas platter, top with tomatoes and mozzarella. Season with sea salt and pepper, add salsa and basil leaves.

Enjoy at Christmas holiday with your mates.
